3rd Coast BBQ Combines Smoked Meats with Gulf Coast Flavor

At first glance, 3rd Coast BBQ & Catering in Spring, Texas, might seem like a simple take-out joint. But step beyond the small window, and you’ll find a spacious patio reminiscent of Southeast Texas crawfish huts, filled with picnic tables and a family-friendly atmosphere.

This unique spot, founded by Troy and Deidra “Dee Dee” Mulligan, blends barbecue with the rich culinary traditions of the Gulf Coast. The couple’s ties to Victoria, Texas, and Louisiana inspired their fusion of smoked meats and coastal flavors.

The Mulligans’ barbecue journey began in 2002, tailgating at Houston Texans games. What started as a passion project for Troy evolved into a full-time venture after Hurricane Harvey, where they cooked for evacuees at NRG Park.

Despite opening their current location on the day of the 2020 lockdown, their persistence paid off, with their restaurant now serving some of Houston’s best prime-grade brisket and Cajun-inspired dishes.

From smoked brisket to New Orleans-style po’boys, 3rd Coast BBQ brings bold flavors, with specials like chicken-and-sausage gumbo stealing the show on weekends. And when spring rolls around, the aroma of crawfish boil fills the air, capturing the essence of the Gulf Coast.
