- ¼ cup sour cream
- 2 large eggs

Instructions
- Preheat oven to 350°F, grease 8-inch baking pan.
- Melt butter, combine with almond flour, sour cream, and vanilla.
- Press dough into pan bottom, bake 5-10 minutes until golden.
- Increase oven to 400°F.
- Whisk filling ingredients, pour over crust.
- Bake 30 minutes at 400°F, then 20 minutes at 230°F.
- Cool before serving.

Instructions
- Separate egg yolks and whites.
- Heat cream, vanilla, and Xylitol until thickened.
- Add whisked egg yolks on low heat, thicken further.
- Whip egg whites until frothy using stand mixer.
- Fold yolk mixture into whites, pour into freezer-safe container.
- Freeze for at least 1 hour.
Once frozen, I like to defrost a little and enjoy a couple of scoops!
Note: Cool your heavy cream for a few minutes and use low heat once you add your yolks to avoid cooking them.
