At Locust Grove Smokehouse in Argyle, owner Dean Tripp notes that custom meat cuts, popularized by social media and cooking shows, are slowing down production.
Requests for complex and culturally specific cuts now take twice as long to process compared to 20 years ago, as customers seek out unique cuts from their favorite internet trends.
David MacVane, owner of Fred the Butcher in Halfmoon, is enthusiastic about this shift, especially in the demand for what the industry calls carcass utilization.
Previously overlooked parts of the animal, such as short ribs, oxtail, and cube steaks, are now making a comeback. MacVane mentions that the demand for “old-fashioned” cuts has risen dramatically in recent years, as people look to cook dishes from various culinary traditions.
In addition to lesser-known cuts, international customers are requesting specific, culturally significant preparations like Korean short ribs, which require precise cuts.
MacVane sees this as a positive trend, allowing his shop to cater to diverse cooking traditions that supermarkets often overlook.
The trend toward specialized cuts extends beyond individual consumers. Meat sellers are no longer sticking to basic roasts and steaks but instead constantly asking for new, trendy cuts.
Tripp, who handles much of the processing at Locust Grove, admits that while the extra work can slow production, it’s exciting to see customers becoming more knowledgeable and passionate about what they want.
The rise in demand for high-quality, unique meat cuts has also led to increased sales of premium options, like wagyu beef. While overall meat consumption has dropped by 40% in the past two decades, consumers now seek out top-tier products when they do indulge.
