On October 15, 2024, butchers from Connecticut and New York sharpened their knives and showcased their meat-cutting skills in the Qualifier Meat-Cutting Challenge at the Danbury Ice Arena.

Among the participants were

  1. Bernie Rojas – Danbury
  2. Manny Rojas – Middletown, N.Y.
  3. Edwin Vargas – Kingston, N.Y.
  4. Ignacio Santos – Poughkeepsie, N.Y.

These skilled butchers are responsible for cutting every steak served at their local Texas Roadhouse restaurants.

Each competitor was given 20 to 30 pounds of beef, including one sirloin, one filet, and one ribeye, and their performance was judged on both quality and yield within a timed cut-off.

The top-scoring butchers will advance to the semi-finals in January, where they will have the chance to compete in the 2025 national competition for a grand prize of $25,000 and the prestigious title of “Meat Cutter of the Year.”

The event exemplifies the dedication and precision that goes into hand-cutting steaks at Texas Roadhouse, where every cut of meat is prepared in-house. The competition also serves as a stepping stone for these butchers, showcasing their talents in front of industry experts.

The grand prize will be awarded at the national finals in March 2025, where butchers from across the country will vie for the top honor.
