It’s not only the meat that keeps customers coming back but the quality and freshness. Sourcing much of their product from local purveyors and nearby Harris Ranch, Wood-Dale moves meat quickly to maintain peak quality.

“Pretty much knowledge of the meat game, how your customer flow is going,” Ramsey says, explaining how they ensure nothing goes to waste.

A Generational Gathering Place

For Bakersfield residents, Wood-Dale is more than a store; it’s a community hub. “I live down the street, so it’s my store. But I’d travel for it regardless,” says loyal customer Alicia Orndoff.

For first-timers, Wood-Dale offers a unique experience with a curated selection of spices and rubs, tutorials from butchers, and a small dining area at the Ming Avenue location where they prepare some of their famous meats.

The COVID-19 pandemic brought an unexpected resurgence, with locals and newcomers alike rediscovering the market.

“There was one day, I came in here and I had three chicken wings in the case and frog legs in the back — that’s it,” Ramsey recalls, describing how demand spiked, with customers lining up around the block.
