The lab offers a variety of cuts, including chuck roast, tri-tip, rib-eye steak, and fresh sausages. “Sausage is our bread and butter. We make about 25 different kinds of sausage,” Clement added, highlighting their wide array of handmade sausages.

The lab has quickly become a go-to destination for locals looking for high-quality meats to serve at their holiday gatherings. Although some traditional items are sold out, Clement’s team of Chico State students is working hard to ensure that customers can still find what they need.
