Deli meat is a go-to for quick meals, but if you’re looking to extend its shelf life, freezing might be the answer. Freezing deli meat is indeed possible, but it’s crucial to follow specific storage guidelines to maintain safety and flavor.
Kimberly Kramer, a clinical dietitian at Nemours Children’s Hospital, Delaware Valley, confirms that “you can freeze deli meat.” To preserve its freshness, store the meat in the freezer as soon as you bring it home if your intent is to freeze it.
If you’ve opened the package, the U.S. Department of Agriculture advises using deli meat within three to five days; otherwise, freeze it within that period. If it’s past five days or the expiration date, it’s safer to discard the meat rather than freeze it, as quality and safety can’t be assured at that point.
Once deli meat has been defrosted, refreezing isn’t recommended. Dr. Mandeep Rai, an infectious disease expert at Banner Thunderbird Medical Center, explains, “Once a deli meat has been unfrozen, it should not be frozen again,” due to the risk of bacteria growth. Freezing doesn’t kill bacteria, so it’s best to consume or discard defrosted meat.
Different deli meats handle freezing differently. Cured meats, like salami, tend to retain their texture better because of their fat content, says Judy Simon, a clinical dietitian at the University of Washington Medical Center. In contrast, water-rich meats, like turkey, might have a slightly altered texture after thawing.
To freeze deli meat effectively, store it at 0°F or below in an airtight freezer bag. For meats sliced at the counter, placing parchment paper between slices can help retain quality, suggests Simon.
